Roasted Cauliflower with Garam Masala
This is a really lovely way to cook cauliflower. It can be used as a stand-alone dish, or pair it with some brown rice and a chickpea curry if you are veggie/vegan or a chicken curry if not!

INGREDIENTS
1 cauliflower, broken into small florets
2tbsp coconut oil
2 tbsp garam masala
1tsp cumin seeds
1 tsp ground turmeric
salt and pepper, to taste
Fresh coriander, chopped
METHOD
1. Melt the coconut oil in a roasting dish, add the cauliflower florets, garam masala, cumin seeds and turmeric. Add salt and pepper to taste.
2. Coat the cauliflower well and place in a preheated oven (200C) for about 20-25 mins, depending on how crispy you would like it. Add some chopped fresh coriander to serve.
