Broccoli and Spinach Soup
This recipe is packed with liver supporting foods like leeks, broccoli, garlic and spinach. This helps to metabolise hormones and toxins, and this can support menopausal symptoms by balancing hormones.
Make a big batch and freeze in portions so you always have a healthy lunch on standby.
Serves 6
Ingredients
3 tbsp coconut oil
1 large leek, chopped
2-3 spring onions, chopped
250g broccoli
3 stalks celery, chopped
100g spinach
2 garlic cloves, finely chopped
1 litre vegetable or chicken stock
50g anchovies in oil, drained and chopped
Method
Heat 1 tablespoon of coconut oil on a medium heat, and gently fry the leak and spring onions until soft.
Add all the other vegetables and the stock.
Bring to the boil, then reduce the heat and simmer for 15-20 minutes.
Add the remaining 2 tablespoons of coconut oil and the anchovies.
Blend the soup well in a food processor (or use a stick) and serve.
Variations
Add some pumpkin seeds as a garnish
Leave out the anchovies and use veggie stock for a vegetarian/vegan soup
Add a dollop of Greek yogurt for a creamy finish
Top with some freshly chopped coriander
