Coconut Key Lime Green Smoothie

This smoothie is very filling and substantial enough to use as a main meal replacement.


Perfect for when time is short or you need something for on the run.


The coconut milk, avocado and cashews pack this smoothie with beneficial essential fats and fibre, whilst the lime brings good levels of vitamin C and antioxidants.


Ingredients

250ml coconut milk, from a tin (organic)

250ml filtered water

100g raw cashews, soaked overnight and drained

1 ripe avocado, pitted and skinned

1 large handful spinach

juice of 1 lime

dash vanilla extract

2-3 drops liquid stevia, optional, if you like a sweeter taste



Simply place all of the ingredients in a powerful blender and blend at full blast until smooth and creamy, about 1 minute.


Transfer to 2 serving glasses and enjoy!


Tip. If you prefer, you can use light coconut milk from a carton instead of a can. In that case use 500ml of milk and omit the water. This will make a lighter smoothie.
